Extra Virgin Olive Oil

The Extra Virgin Olive Oil is known for its quality and nutrients. It ranks first in the list of the best oils in the world according to these parameters. The ripening point of the fruit has to be optimal at the collection of the olive and there is always a control of plagues to maintain the fruit intact. During the extraction of the oil and its elaboration only mechanical means are used (pressing and centrifugation) to ensure that the oil does not reach too high temperatures and conserves its high content of polyphenols and antioxidants.

In our Extra Virgin Olive Oil we guarantee a certified acidity control; a fruity taste and an outstanding aroma. Everything in perfect state for you to taste the oil at its maximum freshness.

In what dishes can you use the oil? As a dressing for salads or vegetables, cooked or roasted, as an accompaniment to all kinds of cheeses and sausages, to give a unique touch to meat and fish, as a preservative and, of course, to enjoy it in the simplest way: on a toast of bread.

Olive Pomace Oil

Olive Pomace Oil is a splendid partner for Extra Virgin Olive Oil. Whereas EVOO is perfect for raw dishes and grilling, giving a special touch to the recipe, Pomace Oil is the most suitable for frying because it resists high temperatures very well and can be reused several times

Thanks to studies over the last decade, we know that this oil can be used more than twice as often as regular seed oils and that it is the oil that is most resistant to high temperatures (it reaches its smoke point at 240*C). These points make it a high performance oil.

In which dishes can I use it? For any type of frying and hot dishes.

Cold extraction

Extra Virgin Olive Oil has three big enemies: light, time and heat. For the production of our oils we maintain a constant temperature control from the very moment the olive is collected, taking it to the oil factory as soon as possible. It is there where the olives are milled without raising the temperature and then stored in aluminium tanks and refrigerated areas. In this way, the organoleptic properties of the oil, its fruity aroma and its taste are better and longer maintained.

Our olives

Arbequina

Arbequina is the most popular variety for the production of olive oil. It has an optimal ripening point for collection and abundance in nutrients. This olive is highly recommended for its large concentration of oleic acid, Omega-9, which is excellent for cardiovascular health care. According to tasters, it is a clean, fresh and herbal oil, with notes of apple, sweet almonds and some hints of artichoke. It is not bitter and has a touch of spice.

Picual

The picual olive is the most typical variety in Andalusia. Like the arbequina, it is also an olive with large proportions of oleic acid, Omega-9, suitable for people with high cholesterol, as it is one of the substances responsible for controlling cholesterol that is harmful to health. It differs from the other varieties in its characteristic bitterness and spiciness and in its aroma of olive leaf and tomato. It is a full-bodied, very powerful oil.
